Aebleskiver are traditional Danish pancakes. I can't remember where I got the idea that I needed yet another piece of cookware but I did. I'm so glad I bought it because these were fabulous. The batter is made with eggs that are seperated and the whites are whipped. This produced a very light and fluffy cake. I filled a few with chocolate chips and I tried to fill some with cherry butter but it leaked out. Nevertheless, these were really yummy. In the picture you'll see a knitting needle. That is what is used to turn the cake.
